My bread baking started many years ago, I have a doughter that has allergic problems and it was more and more difficolut to find simple, plain bread.
in the beginning I worked with my one muscles :), than in 2001, I bought the TM21 and in 2006
Kenwood Major.
getting older, getting more lazy. :)
this is a kind of bread perfect for breakfast, together with some marmelade, ham or cheese it will give you energy until lunch.
if you come around Sunday- for the WHB # 154, you will find this seasons first orange and...(special ingredient ;) )marmelade...perfect for this kind of bread
ok...it is time to stop the small talk and go on with the recipe.....
you need:
500gr of mixed cereal flakes
200gr of flour for cakes*
25gr of fresh yeast**
500gr of water ***
10 gr of salt
let the yeast melt in the water, if you add some suger, this process will be quicker.
add the cereal flakes and the flour and work well, for 15min.
(it is a very heavy dough, it will take time to mix together.)
let rise until dubble
(it will take time, beacause of the heaviness of the dough)
then work the dough other 15min.
form one big bread, or small ones an let rise again for 1-2hours.
bake in a warm oven at 200° for 25 min (the small breads) and 55min for one big bread.

to help the rising use a flour that contains more glutine, perfect would be
the Manitoba flour, here we call it American flour.

you can use less yeast and let rise more.
you can half the yeast and let rise in the frige all night. if you decide to do soo, add some more water, and let the dough very umid, this also helps the rising.
this is a good method with heavy doughs.
it is better to let rise all the night (10-21 hours), it gives the yeast the time to produce it's micoorganismes the natural way.

the water quantity is approximal, I needed all the 500gr , you start with 300gr and the add as you need it.
the dough remains very soaked, that's ok. It should so.

abbiamo fatto quasi 30km anche questa volta!!
ma non vi faccio perdere tempo con le mie chiacchiere....
arriviamo al dunque!
il pane lo faccio da tantissimo, ho una figlia intollerante e con varie allergie, quindi per lei sono importante alimenti con pochi ingredienti e niente additivi.
e trovare il "pane comune" era sempre più difficile.
ho iniziato a mano..nel 2001 mi sono presa il bimby, e nel 2006 il ken.
con l'età si diventa pigri! :)
questi sono dei panini adatissimi alla prima colazione, perché sono molto energetici.
ho impastato ieri sera e li ho cotti stamattina.
poi sono andata via e mi sono dimenticata fare la foto.
infatti nella foto c'è quello che ho trovato oggi pomeriggio quando sono tornata.
vi serve:
500gr di cereali misti
200gr di farina 00*
25gr di lievito**
500gr di acqua ***
10 gr di sale
far scioglire il lievito nell'acqua.
aggiungere i cereali e la farina.
impastare a lungo (15min buoni)
lasciare lievitare fino a raddoppio(ci metterà tanto, è un impasto molto pesante)
riprendere l'impasto e lavorarlo ancora 10-15min
formare dei panini tipo focacce (basse e larghe)
mettere su una placca del forno e lasciare lievitare ancora 1-2ore
infornare a 200° per ca 25min.

la farina 00 ha più glutine della 0, aiuta la lievitazione.
se avete a disposizione la Manitoba o la farina americana, usate quella..è ancora più meglio.

io ho dimezzato il lievito e fatto lievitare in frigo tutta la notte.
in questo caso, tenete l'impasto molto mollo che aiuta anche quello la lievitazione.

a me sono serviti tutti 500gr di acqua,iniziate con 300gr e poi aggiungete.
l'impasto resta molliccio è giusto così
