so here I am...putting together a small thing to participate with...
6 lemons (organic)
3 sprigs of Rosmary
1 tsp of Juniper berries
5 tbls of coarse salt (larger grains)
wash the lemons and sting them with a needle (or you can use a fork, that's quicker).
let them marinate, with 2 tbls of coarse salt in big basin covered with fresh water for 24hours.
the day after dry them with a cloth and put them in a glass jar.
add the Juniper berries, the crushed chili and the rest of the salt.
cover with water.
let rest in a dark cool place for a month.
these lemons are very similar to the Maroc lemons, and can be used in the same way.
